Chicken and Rice So Easy and Good!

Weeknights it is usually best to go for simple meals and prep time is a breeze with this casserole! This old stand-by is a favorite from my Mom's recipe box and it tastes great! I will note here that although you CAN make it with boneless chicken breasts, it will most definitely be a lot more dry and not have much flavor. I would suggest that
if you don't want to use a cut up whole chicken then maybe buy a package of chicken thighs.

Chicken and Rice 

1 fryer, cut up
1 pkg. onion soup mix
salt, pepper to taste
3 ½ cups water
1 ½ cups rice
Place fryer pieces and rice in 3 quart casserole dish.
Sprinkle with salt and pepper. Add soup mix and water. Then bake 1 ½ hours at 375*F

Add a salad and you have a meal!
